Grill to desired doneness; set aside and keep warm. Combine half-and-half, garlic and herbs in a saucepan; simmer over low heat until thickened and reduced by half. Add blue cheese and stir just until melted. Place burgers on rolls; spoon sauce over burgers. If desired, sauté mushrooms and onion in butter until tender; spoon onto burgers.
