How to Use – Make Your Own Makgeolli at Home
Ingredients Needed:
850g Andong Nuruk
1.5 kg steamed rice (white rice preferred)
4.5~6 liters of filtered water
Instructions:
1. Prepare the Rice
Cook 1.5 kg of rice and let it cool to room temperature. Sticky or short-grain rice is recommended.
2. Mix with Nuruk
In a clean, sterilized container, mix the cooked rice with 850g of Andong Nuruk. Add 4.5~6 liters of filtered water and mix thoroughly.
3. Fermentation
Cover the container with a breathable cloth (not airtight). Let the mixture ferment at room temperature (77°F) for 5 to 7 days. Stir once a day.
4. Strain & Bottle
After fermentation, strain the mixture through a cheesecloth or fine strainer.
Transfer the liquid to clean bottles and refrigerate.
5. Enjoy Your Makgeolli!
Chill before serving. Shake gently before pouring to enjoy the traditional cloudy appearance and full flavor.
🍶 Tip: Adjust fermentation time to your taste – longer fermenting creates a drier, deeper flavor.
